Brebirousse is a square shaped soft cheese made from pasteurised ewes’ milk. The cheese is matured over 21 days creating a melt-in-the-mouth texture with intense flavours. The uneven rind which is light brown to orange in colour, provides character and additional flavour to the cheese.
