Weetons cranberry, chestnut & orange stuffing

Ingredients

  • 1kg sausage meat (available from our butchery counter)
  • 300g fresh white breadcrumbs
  • 2 large white onions, finely diced
  • 3 sprigs thyme, leaves chopped
  • 2 tbsp chopped parsley
  • 200g semi-dried cranberries, chopped
  • 200g cooked chestnuts, chopped
  • 1/2 orange, zested
  • 2 eggs, beaten
  • Olive oil
  • Freshly ground black pepper
  • Sea salt

 

  1. Soften the onions in a little oil for 5 mintues.
  2. Mix all of the other ingredients together in a bowl and stir in the softened onions.
  3. Shape into walnut-sized balls and place on a roasting tray.
  4. Drizzle with a little oil and bake in a pre-heated oven 180C for 25-3o minutes until golden brown.
