Weetons cranberry, chestnut & orange stuffing
1kg sausage meat (available from our butchery counter)
300g fresh white breadcrumbs
2 large white onions, finely diced
3 sprigs thyme, leaves chopped
2 tbsp chopped parsley
200g semi-dried cranberries, chopped
200g cooked chestnuts, chopped
1/2 orange, zested
2 eggs, beaten
Freshly ground black pepper
Soften the onions in a little oil for 5 mintues.
Mix all of the other ingredients together in a bowl and stir in the softened onions.
Shape into walnut-sized balls and place on a roasting tray.
Drizzle with a little oil and bake in a pre-heated oven 180C for 25-3o minutes until golden brown.
