’Florence’ or ’Italian’ fennel might be the short, slightly dumpy cousin of celery but what it loses in looks it makes up for in flavour. Infusing a gloriously soft aniseed aroma to salads, soups and potato bakes; it comes into its own roasted with chicken and oily fish, bringing out the sweet flavours of the meat.
