The fresh green shoots and pale blue flowers of this woody, evergreen herb evoke the scents and sun of the Mediterranean. The highly-aromatic leaves can be finely chopped and scattered into fish dishes; sprigs can be rubbed into roasting joints; and the flowers used to add fragrance to ice-cream, cakes and fools.
